In that case please try going to Settings > System Update > Update Profile, then Update PRL as well. After that, and if you don't get any errors, please try changing the date and time again if it is still incorrect, or turn off the automatic setting, then turn it back on so it may update.
All three of our phones have become convinced that today, Friday 2/28/20 is Thursday 2/27/20. This happened in the last 5 hours.
I was able to manually reset the date but it reverts back to the incorrect date as soon as Automatic date and time option is selected.
